Since Valentine’s Day is right around the corner, I decided to share a recipe for cocoa-flavored cupcakes with heart frosting which I plan to bake at home this Valentine’s Day.
Here you go:
What you need (for 16 cupcakes):
What to do:
Pour out one cup of boiling water into a small bowl and add the unsweetened cocoa powder to it. Simply whisk this altogether till it starts looking (and tasting!) like hot chocolate. In a separate bowl, add the required quantity of flour, baking powder and salt. Again, whisk it all up to make it a uniform mixture.
In a third bowl, add butter and sugar in the above mentioned proportions and use your mixer to mix it all up till a nice fluffy mixture emerges. Once this is done, add the two eggs one at a time to get a nice, creamy batter. A dash of some vanilla and you’re almost done with the mixing part of the cupcakes.
Now, add the ingredients from your previous bowl (the flour and baking powder one) to this, finally adding the ‘hot chocolate’ mix from the first step. Your cake batter is ready to go into the oven.
Pop your cupcake tray into the oven at ~370 degrees for about 20 minutes and you’re done with delectable chocolate cupcakes!
You can now use a heart shaped cookie cutter to scoop out the top layer of each cupcake and fill it up with the frosting.
A word of caution here though: The last time I baked cupcakes, my kids didn’t have the patience to wait till the frosting was in place… The cupcakes seemed to disappear into thin air instantly ;-)
